Information must be declared per 100g 0r 100ml of the food
 
"GROUP 1" DECLARATION - aka "THE BIG 4" - The minimum declaration permitted
Declaration Units per 100g or 100ml Arrived at by
Energy kJ and kcal Calculation based on values of the declared nutrients both measured and calculated
Protein g Analysis: Nitrogen by Dumas or Kjeldahl
Carbohydrate g Calculation of the difference remaining after subtracting the 4 items measured from the whole sample
Fat g Analysis: Fat by acid hydrolysis and hexane extraction
Measured for calculation but not declared
Moisture Analysis: Moisture by oven drying
Ash Analysis: Ash by muffle furnace ashing
 
"GROUP 2" DECLARATION - aka "BIG4 + LITTLE 4" or"4+4" or"BIG 8"
Declaration Units per 100g or 100ml Arrived at by
Energy kJ and kcal Calculation based on values of the declared nutrients both measured and calculated
Protein g Analysis: Nitrogen by Dumas or Kjeldahl
Carbohydrate g Calculation of the difference remaining after subtracting 6 of the 8 items measured from the whole sample. Those items measured but not included in the subtraction are sugars (as they are carbohydrates) and saturated fats (as they form part of the total "Fat" figure which is included in the subtraction)

* If any of these items are declared in the nutrition information, they must all be declared as part of a Group 2 declaration.
** When one of these is declared, saturates must also be declared.
*** Only vitamins and minerals listed in the Food Labelling Regulations 1996 can be declared, and they must be present in significant amounts. An additional per serving or portion statement is required for the vitamins/minerals but not other nutrients.
 
Any nutrient not listed above can only be declared if a claim has been made about it, in which case its declaration becomes compulsory e.g. fructose or trans fatty acids.
