CHEMICAL CONTAMINANTS
Many raw materials used in food manufacture and final food products are at risk of contamination by hazardous chemicals. These can arise in foods by several different mechanisms:
  1. Chemicals generated during food manufacturing (e.g. chloropropanols) or the home cooking process (e.g. acrylamide)
  2. Toxic chemicals can occur naturally in foods. Some food plants contain harmfully chemicals, in addition both bacteria and fungi that may contaminate raw materials and foods can produce toxins
  3. Intentional use at some point in the food production chain, examples include pesticides animal drugs (veterinary residues)
  4. Environmental pollutants potentially giving rise to toxic metals or compounds such as dioxins and PCBs.
Chemical contaminants are a subject of consumer concern and increasing regulatory interest in Europe at present.
